Recipe: Sarah’s Favorite (Healthy!) 3-Ingredient Cookies!
Guys! If you’re trying to eat healthy and cut back on sugar like we are, you’re going to love these cookies. I can’t remember where I stumbled upon the recipe, but I’ve been making a batch at least once a week for the last year. These cookies couldn’t be simpler to throw together. They make a great snack or dessert substitute. And my kids like them too, yay!
Sarah’s Healthy 3-Ingredient Almond Cookies
Ingredients:
1 cup crunchy almond butter (doesn’t need to be exact—just eyeball it)
1 egg
½ cup natural, zero-calorie sweetener such as stevia or Lakanto (my preference)
Optional ingredients:
Sea salt for sprinkling
Unsweetened coconut flakes
½ cup chocolate chips
Preparation:
Preheat oven to 350 and lightly grease a sheet pan with cooking spray. Mix the almond butter, egg and sweetener in a medium-sized bowl, being careful to incorporate all ingredients well (mix in chocolate chips if using).Then form batter into one-inch balls and place on sheet pan. Using a fork, press each cookie down in a crisscross pattern you might do for peanut butter cookies (optional). Sprinkle with a little sea salt (optional) or unsweetened coconut flakes. Bake for about 10-12 minutes and let cool for at least 20 minutes before enjoying (they need to set a bit).
